Cauliflower Soup
My caulies have all blown out due to the heavy rain, so I get to make one of my favourite soups.
1 kg cauliflowers in florets
1 large leek chopped
1 large onion chopped
3 sticks celery with a few leaves, chopped
8 cups chicken stock
100g pepperoni salami sliced thinly ( or bacon)
1 tbsp butter
1/4 cup flour
salt and pepper
Melt butter and soften the onion, then add flour stirring briskly to make a roux, gradually add enough hot stock to create a thin liquid without lumps. Add all the other veg, pepperoni, salt and pepper and the rest of the stock. Simmer until the veg are tender. Strain, puree the veg and meat, return to pan with strained stock and just before serving add a good dollop of cream ( or yogurt). Serve with slices of Chiabatta or and other good bread, liberally dosed with olive oil and toasted.

Be yummy with parmesan biscuits - the ones where you just grate the cheese in a heap on a baking tray and bake 10 mins or so - thanks Blossom
