banana jam
What to do with the bananas no one will eat and are starting to get overripe. Here's a recipe I like from http://www.bananaland.com.au/topmenu/hunger/banana_jam.php]
Must admit I adapt - just use castor sugar and I add a small teaspoon cinnamon. Perfect on toast

Re: banana jam
Yum! That sounds delicious.
I would add a drop or 3 of good quality rum for an adult version.

That's okay - I never thought of making jam out of bananas.
Will do so next time there are some that need to be used up and I don't feel like making banana muffins, etc.
